 KAYSERİ MANTISI

(TURKISH RAVIOLI)

Materials

 

1 egg

1 glass of warm water

3 cups flour

Salt

For inner material

 

200 g ground beef

1 small onion

Black pepper

Red pepper

Salt

 

For the above

Garlic yogurt

80 g butter

2 tablespoons tomato paste

Mint

 

 

How is it done?

First, whisk the water, salt and egg in a bowl. When the whisking process is completed, start kneading by adding flour.

If the consistency of the dough is too soft, you can add flour little by little. Cover it and let it rest for 30 minutes.

Grate the onion you will use for the mixture and add it to the minced meat. Add salt, chillies and black pepper to the ground beef. Different spices can be added upon request.

Roll out the dough on a floured counter and cut into small squares. Fill them with the minced meat mixture, close them in the form of a bundle.

At that time, start boiling by adding water and salt into the pan. Cook the prepared mantı in boiling water.

For the top, melt the butter and fry the tomato paste. Transfer the ravioli to a pot and cook for another 10 minutes. Take it to the serving plate. You can add garlic yogurt, mint and sumac on it.

You can serve the homemade ravioli with a light snack in the oven. Enjoy your meal.

 

 

What are the tricks?

While preparing the ravioli dough, take care of the kneading process. If the dough remains lumpy, you can continue the kneading process.

Before filling the filling, the dough should be covered with a damp cloth and rested for about 30 minutes.

It is also very important that the mortar with minced meat is not watery. Therefore, after preparing the mortar, you can leave it to rest in the refrigerator.

When you start to roll the ravioli dough, you need to be fast. In order for the dough not to dry, it should be closed immediately after the mortar is filled.

You can add chicken or broth into the boiling water to increase its flavor.

Do not cover the lid of the pot during the boiling process.

How long does manti cook? While ready-made mantıs are cooked in an average of 10 minutes, homemade mantıs are cooked within 12-15 minutes.
